Day 2/ Hamburgers...Raw Vegan Style

Today I had a 7:00am class, and as usual, I was running late. So I didn't get a chance to make the smoothie before I left for class.

So instead I made some hot tea to go and grabbed a live food energy bar that I bought from Life Grocery.

After I got back from class, I made a smoothie. Mmmmm! Those smoothies are delicious! Berries, a banana, soy milk, agave nectar, and spirulina. It was great.

This evening I prepared the Mushroom Burger. It was two marinated Portabella Mushroom caps, tomato slices, onion slices, and the recipe called for guacamole, but I substituted raw herbed hummus.

Not bad. If I squinted, I almost thought I was eating a hamburger on a bun.

For dessert, another smoothie. This time just mangoes, a banana, soy milk, agave nectar, and spirulina. I am loving these smoothies.

Overall, my assessment is that it is tough to find things to eat...I mean, there are endless raw food recipes, I know. But you have to make them all from scratch in most cases, unless you live near a restaurant that sells raw meals. The grocery store was almost useless with the exception of the fruit and vegetable section.

However, I want my health back, and I'm pretty motivated. And these smoothies along with the creative recipes are softening the blow.

It's so funny...just a few days ago I never thought I could stick to being a vegetarian. Now, I look with longing at all the things vegetarians can eat that I can't! It's so funny how when your perspective changes, things seem easy when they used to be so difficult.
