Day 12/ Raw Vegan Lasagna



Today I tried a new recipe out of Raw Food Made Easy For 1 or 2 People. Wow, is it wonderful! I'm so proud of this recipe that I actually took some photos.

I am not sure that I can give the entire recipe here without the author's permission, but I will share that I made the Marinara Sauce with fresh tomatoes, sundried tomatoes, sweet red pepper, fresh basil, fresh garlic, sea salt, olive oil, black pepper, oregano, and I added some red pepper flakes. I blended it altogether in my food processor, and then I added some sliced black olives.

The Lasagna is made with sliced zucchini (to replace the lasagna noodles), chopped spinach (or any green leafy vegetable will do), and avocado (to replace the cheese). Then you just layer it like Lasagna.

When I was done I thought it looked a lot like the Lasagna that I was used to, but I wondered, how would it taste? Well, I'm here to say that from the first bite, I was hooked!

Wow, it was delicious! It actually tasted like Lasagna, what do ya know? I kept feeling guilty eating it, and I had to remind myself that it was all live vegetables and okay for me to eat.

I keep waiting to feel deprived on this raw food cleanse (Join The Lifeit Detox 28 Days Raw Food Cleanse), but so far I'm enjoying nearly everything that I have tried. I realize now that my body had been trying to tell me for a long time to eat more fresh fruits and vegetables...I guess it's better late than never.
